Carrot cake

This is a regular cake Mum used to make in the 1990’s.

3c plain flour
2t baking powder
1t bicarb of soda
1t cinnamon
1t nutmeg
1/2t garam masala powder
3 eggs
1c sugar
1 1/2c sunflower oil
vanilla essence
pinch salt
1c sultanas
1/2c walnuts chopped
3c grated zucchini or carrots


  1. Beat eggs, sugar, vanilla and salt until creamy.
  2. Add oil and mix.
  3. Sift flour and other ingredients into the mixture.
  4. Cook in the oven at 350 deg F

125gm philly cheese
1T butter
2c icing sugar
vanilla essence

Beat until creamy and frost the cake when the cake is cold.
