Here’s another one of Mum’s 1990s recipe that could make a comeback.
1/2 c butter or margarine
1/2c plain flour
2t vanilla essence
- Blend all the ingredients together.
- Pour into a greased pyrex pie dish.
- Bake at 180c for 1 hour or until the centre is firm.
The flour settles at the base to form a crust.
The coconut forms the top crust and the centre form an egg custard. Mmm custard.
